Ingredients

Dressing:
  • 1/4 cup mayonnaise
  • 1/2 cup PLAIN yogurt
  • 1 teaspoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 2 cloves garlic minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
Salad:
  • 3 cooked chicken breasts chopped - about 1/2 lb. each
  • 1/2 red onion diced
  • 2 stalks celery finely diced
  • 1/4 cup green onions diced
  • 1/2 cup cashews
  • 1/2 cup raisins
  • 1/2 cup shredded carrots

Instructions

  1. In a medium bowl combine all the Dressing ingredients and stir until smooth.
  2. In a large bowl combine all the salad ingredients.
  3. Add dressing to the salad and toss to combine.
  4. Garnish with more green onions and serve or refrigerate.
