Ingredients

Cupcake batter ingredients
  • 1 egg
  • 1/2 cup sugar
  • 1 cup flour
  • 1/2 cup sour cream
  • 1/2 tsp vanilla paste
  • 1 tsp butter
  • 1 tsp baking powder
Cream Ingredients
  • 1 cup sour cream or heavy cream
  • 1/2 cup sugar
  • 1/2 tsp Red food coloring
  • 12 marshmallows

  1. Preheat oven to 350°F (180°C).
  2. Grease a 12-cup mini muffin tin with butter. Set aside.
  3. In a large mixing bowl whisk together the egg, sugar, vanilla paste, and sour cream. Beat the mixture with a stand mixer or electric hand mixer.
  4. Add flour and baking powder.
  5. Blend the dough until smooth.
  6. Pour the batter into the cups of the mini cupcake tin. Make sure to leave room to rise.
  7. Bake for 20 minutes. Once the muffins have baked, take the cupcake tin out of the oven and let the mini muffins sit to cool down.
Frosting Instructions
  1. While the cupcake base is cooling, make the vanilla frosting. Mix sour cream with sugar and red food dye in a medium mixing bowl. 
  2. Whisk the mixture. If your sour cream is runny, you can add a thickener such as cornstarch or powdered sugar.
  3. Now have fun decorating! Make cute swirls of red icing on top of cupcakes using a piping bag or fork. Dip a toothpick in the red food coloring and draw skeleton faces on the marshmallows. Get your kids involved and watch them have fun drawing the skeleton faces. These can be easily turned into mini ghost cupcakes or spooky pumpkin cupcakes. Place the marshmallow skull on the red frosting. Viola! Don't they look adorable?!

Notes

  • Sift your dry ingredients to eliminate lumps and aerate the flour. This will help you get light cupcakes.
  • Don’t overwork your batter (this means folding or stirring your batter longer than it needs to blend the ingredients together). You will end up with cute, but tough cupcakes.
