Daiquiri

To make simple syrup, heat equals parts by volume of sugar and water in a saucepan over medium-high heat (I use 1/2 cup/125ml water and 1/2 cup/100g sugar), stirring until the sugar is dissolved. Let cool, then refrigerate in a jar until ready to use. It will keep in the refrigerator for several weeks.

The rich, spicy notes of Stiggins Fancy Pineapple Rum really shines in this daiquiri. If you can't find it, a good-quality dark rum can be used in its place.

Ingredients

  • 2 ounces dark rum preferably Stiggins Fancy Pineapple rum
  • 3/4 ounce lime juice freshly squeezed
  • 1/2 ounce simple syrup
  • pineapple for garnish, wedge or lime wheel

  1. Add the rum, lime juice, and simple syrup to a cocktail shaker.
  2. Fill shaker 2/3rds full with ice and shake until the mixture is well-chilled, 15 to 20 seconds. Strain into a chilled couple glass. Garnish with pineapple wedge or lime wheel.
