Danish Risalamande Recipe (Almond Rice Pudding)

There's nothing better than rice pudding — except for maybe a Risalamande recipe, which adds almonds & cherries to a creamy and perfect holiday dessert!

Ingredients

  • 2 ¼ cups (18floz/507ml) whole milk
  • 2 cups (10oz/284g) cherries (fresh or frozen)
  • ½ cup short-grained white rice
  • 2 tablespoons sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • 6 tablespoons water
  • ¾ cup (3¾oz/106g) plus ¼ cup (1¼oz/35g) toasted almonds chopped and divided
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup (8floz/225ml) heavy whipping cream
