Dark Chocolate Orange Shortbread Bars

Dark Chocolate Orange Shortbread Bars are wonderfully buttery and slightly crunchy with orange marmalade filling and dark chocolate topping.

Ingredients

  • 1 cup butter softened, unsalted
  • 1 cup sugar
  • 2 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups orange marmalade
  • 1/2 cup dark chocolate chunks

Instructions

  1. Preheat oven to 350 degrees and spray an 8x8 baking dish with baking spray.
  2. To your stand mixer add the butter and sugar and cream on medium speed until fluffy, about 2-3 minutes.
  3. Add in egg yolks and vanilla extract until creamy.
  4. Add flour, baking powder, and salt until just combined.
  5. Spread about half the mixture into the baking dish and press gently.
  6. Spread orange marmalade over the mixture.
  7. Sprinkle the remaining shortbread mixture over the orange marmalade and top with dark chocolate chunks.
  8. Bake for 30-35 minutes or until very lightly browned.
  9. Cool completely before slicing.
