Date Bars

The best date bars recipe made with a sweet date filling and topped with a delicious buttery oat crumble. They're gluten-free, naturally sweetened and super easy to make!

Ingredients

Crumble
  • 1 ½ cups oat flour
  • 1 cup rolled oats old-fashioned
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened, or coconut oil
Filling
  • 1 package 8 ounces dates, chopped (about 1 ¼ cups)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat to 350 F and line a 8x8 square baking dish with parchment paper.
  2. Add dates and water to a saucepan. Bring to a boil, then reduce heat to simmer. Simmer for about 10 minutes, stirring occasionally until mixture has thickened and dates are soft.
  3. Stir in vanilla and lemon juice to date mixture.
  4. While dates are simmering, make crumble mixture by adding oat flour, rolled oats, coconut sugar and baking soda to a medium mixing bowl. Stir to combine.
  5. Add vanilla extract and softened butter to the oat mixture. Using a fork or your fingers, stir together until a crumble forms and the dough starts to clump together.
  6. Add 2 cups of the oat mixture to the prepared baking pan. Press the dough firmly into the bottom of the pan using your hands to create an even crust.
  7. Pour the date mixture over the crust and spread into an even layer with a spatula.
  8. Sprinkle the remaining oat mixture (1 cup) over the date mixture, pressing down gently with a spatula.
  9. Bake for 35-40 minutes or until filling is bubbly and topping is golden.
  10. Allow bars to cool completely before cutting into 16 bars. Enjoy!

Notes

  • Storage: Store any leftover date bars at room temperature for 3-4 days, in the fridge for up to 1 week or in the freezer for up to 3 months.
