Ingredients

  • 1 can coconut milk 13 ounces
  • 1 bar stevia sweetened dark chocolate (about 85 grams)
  • 2 Tablespoon unsweetened cocoa powder
  • 1 Tablespoon erythritol
  • 4 egg yolks

Instructions

    Cup of Yum
  1. Bring coconut milk to a boil in a saucepan.
  2. Chop up chocolate into small chunks - set aside about 1 Tablespoon of chopped chocolate.
  3. Add chocolate and dry ingredients to blender and pulse for 30 seconds.
  4. Add egg yolks and blend until creamy (another 30 seconds).
  5. Slowly add hot coconut milk, as you blend, until it is fully incorporated and smooth.
  6. Pour into parfait cups and sprinkle the tops with the remaining crushed chocolate.
  7. Refrigerate for 2 hours or until set.
