Ingredients
- 1 can coconut milk 13 ounces
- 1 bar stevia sweetened dark chocolate (about 85 grams)
- 2 Tablespoon unsweetened cocoa powder
- 1 Tablespoon erythritol
- 4 egg yolks
Instructions
- Bring coconut milk to a boil in a saucepan.
- Chop up chocolate into small chunks - set aside about 1 Tablespoon of chopped chocolate.
- Add chocolate and dry ingredients to blender and pulse for 30 seconds.
- Add egg yolks and blend until creamy (another 30 seconds).
- Slowly add hot coconut milk, as you blend, until it is fully incorporated and smooth.
- Pour into parfait cups and sprinkle the tops with the remaining crushed chocolate.
- Refrigerate for 2 hours or until set.
