Ingredients
- 4 cups carrots sliced
- 3 tablespoon sugar divided
- 3 tablespoon butter
- 1 cup chicken broth
- 1 tablespoon ginger, minced or garlic if preferred
- 1 tablespoon lemon juice
- ¼ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
Instructions
- In a skillet with a lid, bring ginger or garlic, carrots, salt, 1 tablespoon sugar, and chicken broth to a boil.
- Cover and reduce heat to medium and simmer until carrots are starting to become tender, about 5 minutes. Stir occasionally.
- Uncover, increase heat to medium high, and boil until liquid is reduced. About 5 minutes.
- Add butter and remaining 2 tablespoons sugar to skillet. Stir constantly and make sure carrots are nicely coated, about 3 minutes. Remove from heat, add lemon juice and combine. Season with more salt and pepper if desired. Serve immediately and enjoy!

- Tips:
- If using fresh ginger root, cut away some of the peel and finely grate the amount of ginger you need. Store the remaining nob of ginger root wrapped in plastic in your freezer, and pull it out whenever you need it.
- The 6-8 inch generic carrots we are most familiar with are called Danver carrots. You can use baby carrots or any variety of carrots you like for this recipe. Heirloom carrots are especially nice if you are making this side dish for the holidays.
- Fresh garlic is best for this recipe. It is best to store any remaining garlic in an airtight container in the refrigerator, where it will last for up to 2 weeks.
