Delicious Red Bean Soup with Black Glutinous Rice Dessert

Ingredients

  • 1 pound adzuki beans about 3 cups
  • 3/4 cups black glutinous rice
  • 1 mandarin orange peel
  • 16 cups water
  • 1 cup tapioca pearls reduce to 1/2 cup if you prefer it to be more soupy, small
  • 1 1/2 cup brown sugar add more to taste (I used 3 brown sugar slabs, packed
  • coconut milk optional, canned

Notes

  • This recipe can easily be adapted to cook in a slow cooker or a thermal insulated pot instead if you think you need to leave it unattended.
