Ingredients

  • 2 cups gluten-free flour blend
  • 2/3 cup brown sugar firmly packed
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon ground
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground ginger
  • ½ butter melted
  • ½ cup pumpkin puree
  • 1/3 buttermilk
  • 2 egg slightly beaten

Instructions

  1. Heat oven to 400°F.
  2. Place paper baking cups into 12-cup muffin pan cups or grease cups. Set aside.
  3. Combine all ingredients except butter, pumpkin, buttermilk, and eggs in a bowl.
  4. Combine all remaining ingredients in another bowl.
  5. Stir into flour blend mixture just until moistened.
  6. Spoon batter into the prepared muffin pan.
  7. Bake for 15-20 minutes or until a toothpick inserted in the center comes clean. Cool for 5 minutes; remove from pan.
  8. Enjoy!
