Ingredients

  • 1 teaspoons olive oil or 1/4 - 1/2 tablespoon of butter
  • 1/2 green bell pepper, diced
  • 1/3 cup onion, diced
  • 2-3 cloves garlic, minced
  • 1/3 cup leftover ham, diced
  • 4 eggs
  • 1/3 cup Cheddar cheese, shredded
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon fine ground salt
  • 1/4 teaspoon dried parsley
  • cooking spray to oil waffle iron

Instructions

    Cup of Yum
  1. Pre-heat waffle iron. For ours, we set it to 2-3.
  2. In a small sauté pan, heat olive oil or butter and add onion, garlic, and pepper. Sauté for 3-5 minutes until onions are tender, but not browned. Remove rom heat, and set aside.
  3. In a medium sized bowl, add eggs, salt, and onion powder and whisk eggs. Add shredded cheese and mix well.
  4. Add cooked onions, peppers, and garlic to the eggs and mix well.
  5. Give waffle iron a quick spray with cooking spray to grease.
  6. With a ladle or a serving spoon, spoon egg mixture in waffle iron, ensuring that you're evenly distributing the ham, pepper, and onions.
  7. Cook on level 2-3 for 3-4 minutes until eggs are fully cooked and slightly browned.
  8. Serve immediately.

Notes

  • This recipe makes 4 waffles in a Belgium Waffle maker.  Will make about 1 large or 2 thin waffles in a traditional round waffle iron.
  • Substitute other meats, veggies, or cheese that you have.
