Detox Quinoa Salad with Turmeric Tahini Dressing

Ingredients

  • 1 cup quinoa
  • 1 mache greens 3.5 oz, package
  • 4 scallions chopped
  • 2 apple chopped, small
  • 1 cup pistachio
  • For dressing:
  • 3 tablespoon tahini well-stirred
  • 3 tablespoon olive oil
  • 1 lemon juiced
  • ¼ teaspoon Turmeric
  • 2 - 3 tablespoon water to thin out
  • salt to taste
  • black pepper to taste

Instructions

  1. Bring 2 cups salted water to a boil. Add 1 cup quinoa and return to a boil, stir. Cover with a tight-fitting lid, reduce heat to medium and simmer for about 12 minutes or until liquid is absorbed. Or you can use a rice cooker.
  2. Remove from heat, fluff with a fork and let stand for a few minutes with the lid on.
  3. Add all salad ingredients into a large bowl and toss gently.
  4. Make dressing. In a jar add all dressing ingredients and shake well. Adjust water to desired consistency. I used 3 tablespoon water.
  5. Dress right before serving.
