Dijon Roasted Asparagus

Roasted asparagus with a delicious Dijon mixture, breadcrumbs and Parmesan cheese. This side dish tastes like comfort food!

Ingredients

  • 1/4 cup Dijon mustard
  • 2 Tablespoons olive oil
  • 3 garlic cloves minced
  • 1/2 cup Panko bread crumbs
  • 1 pound fresh asparagus trimmed
  • 1/2 cup freshly shredded Parmesan cheese or Asiago cheese

Instructions

  1. In a small bowl, combine Dijon mustard, oil, and garlic. In a small bowl, combine panko bread crumbs and 1 tablespoon of the mustard mixture.
  2. Place asparagus in an ungreased 13-in. x 9-in. baking dish; drizzle with remaining mustard mixture. Sprinkle with bread crumb mixture and cheese.
  3. Bake, uncovered, at 425° for 15 minutes or until golden brown.
