Dill Cucumber Salad

Ingredients

  • 1 English cucumber, washed well & sliced thinly
  • ¼ tsp sea salt
  • 3 tbsp seasoned rice vinegar
  • ¼ red onion, sliced very thinly
  • Fresh dill, to taste
  • Crushed red pepper flakes, to taste
  • Sea salt and freshly cracked pepper, to taste, if needed

Instructions

  1. Place the cucumber slices in a strainer placed over a plate. Season with 1/4 teaspoon of salt then toss to coat evenly. Place in the refrigerator for 30 minutes. 
  2. Place the drained cucumber slices in a serving bowl. Add the vinegar, red onion slices, fresh dill, and crushed red pepper flakes, to taste; toss to coat evenly.
  3. Place in the refrigerator for 30 minutes before serving.
  4. Toss before serving then taste and season with sea salt and freshly cracked pepper, to taste.
  5. Serve and enjoy.
