Dill Pickle Ham Salad

This dill pickle ham salad is an easy way to use up some of that leftover ham! My recipe is a creamy mixture of finely chopped ham, pickles, boiled eggs, onions, and herbs. Perfect on a croissant, but it's also good in a lettuce wrap, if you'd prefer to keep it low carb.

Ingredients

  • 1 pound cooked ham
  • 2 hard boiled eggs, chopped
  • ½ cup mayonnaise
  • ¼ cup chopped dill pickles
  • 2 tablespoons chopped sweet onion
  • 2 tablespoons yellow mustard
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon white distilled vinegar
  • cracked pepper to taste
  • 6 croissants

Instructions

  1. Add the ham to a food processor and process until finely chopped. Alternately, chop the ham by hand, being sure to chop it into very small pieces.
  2. Add the ham to a mixing bowl with the remaining ingredients and stir together until combined.
  3. Spoon salad evenly between the croissants to make sandwiches.

Notes

  • Make this sandwich low carb by replacing the croissants with lettuce wraps or low carb tortillas.
  • This also makes a great dip for crackers.
