Dill Pickle Hummus is a creamy blend of chickpeas, garlic, tahini, dill pickles, and fresh dill, combined with lemon juice and pickle brine for a tangy twist. This variation adds the distinctive sharpness of pickle juice and the herbaceous notes of dill to classic hummus, resulting in a flavorful spread with a slightly tangy and herbal profile. Ingredients
- 2 garbanzo beans drained and rinsed, 15-ounce cans
- 2 small garlic cloves
- ½ cup dill pickle plus more for garnish, Sucker Punch brand
- 3 tablespoons fresh dill chopped, plush more for garnish
- ½ cup tahini
- Juice lemon
- 1 tablespoon chickpea water
- 3 tablespoons pickle juice
- salt to taste
Instructions
- Add the ingredients (except the salt) to a food processor and process until smooth.
- Taste and add more salt or pickle juice if needed.
- Store in the fridge and enjoy chilled.
Notes
- Toast sesame seeds until fragrant before blending to make your own tahini.
- Save chickpea cooking liquid (aquafaba) as a useful ingredient for adjusting hummus texture or for use in vegan baking.
