Ingredients

  • 2 cups granulated sugar
  • ½ cup white corn syrup
  • ½ cup water cold
  • 2 egg room temperature, white
  • 1 teaspoon vanilla extract
Optional Garnish
  • pecans whole or chopped
  • raisins
  • dried fruit
  • Sprinkles

Instructions

  1. Line baking sheets with parchment paper.
  2. Add a candy thermometer to a medium heavy saucepan.
  3. Heat sugar, corn syrup and water over medium heat until it reaches hard ball stage, 250-260 degrees F.
  4. While the syrup is cooking, beat egg whites until stiff peaks form.
  5. When the sugar reaches temperature, remove from heat and very slowly pour into the egg white, whipping on high speed constantly.
  6. Add vanilla and continue beating on high until candy holds it shape, about 10-15 minutes ** see notes.
  7. Spray a cookie dough scoop or 2 spoons with cooking spray, then drop scoops of candy onto prepared baking sheets.
  8. Immediately add whole pecan or other garnish, if using.
  9. Allow divinity to dry and harden for several hours or overnight.
  10. Store in airtight container for up to two weeks.

Notes

  • Beat the mixture on high speed for about 5 minutes, then rest for 2-3 minutes; repeat as needed to avoid overheating and achieve proper texture.
  • Use a candy thermometer to monitor the syrup temperature accurately to reach the hard ball stage (250-260°F).
  • Drop candy portions quickly onto parchment paper and add garnishes immediately to ensure they stick well.
  • Allow the candy to dry and set for several hours or overnight before storing.
  • Store divinity in an airtight container and consume within two weeks for best freshness.
