Dominique Ansel Chocolate Chunk Cookies

Ingredients

  • 14 Tablespoons butter room temperature, unsalted
  • 2/3 cup (130g) granulated sugar
  • 2/3 cup (130 g) light brown sugar
  • 2 large egg
  • 2 2/3 cups (330 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup (100 g) milk chocolate chunks
  • 2/3 cup (100 g) semi-sweet chocolate chunks

  1. Preheat oven to 350 degrees and line a light-colored baking sheet with parchment paper.
  2. In a large mixing bowl, combine butter, sugar, and brown sugar with a whisk. The butter needs to be soft enough to incorporate into the sugars. Add eggs and whisk until smooth and creamy.
  3. Add the flour, baking soda, and salt. Mix until just combined with a spatula. Fold in the chocolate chunks until evenly distributed. Cover and chill the dough in the refrigerator for 5-10 minutes.
  4. Shape the chilled dough into balls about 2 1/2" in diameter. Place them on baking sheet and gently press down slightly to flatten them into discs.
  5. Bake for 9-10 minutes, until the edges are a light golden color and the center is soft and gooey. Let the cookies cool for 5-10 minutes and then enjoy!

Notes

  • Brown butter before mixing to deepen the flavor of the cookies.
  • Chill the dough for 24 to 48 hours to enhance texture and flavor development.
  • Use high-quality chocolate bars, such as Lindt or Trader Joe's Pound Plus Bars, for chunk pieces.
  • Adding extra brown sugar and chocolate chunks can enrich sweetness and chocolate presence.
