Ingredients

Picante Dressing
  • 16 ounces picante sauce Pace brand
  • 1/2 cup mayonnaise
  • black pepper to taste
  • salt to taste
Salad
  • 1 cup onion chopped
  • 1 pound ground beef
  • 14 ounces red kidney beans drained
  • 1 head iceberg lettuce chopped
  • 2 tomato chopped
  • 2 cups cheese grated
  • 1 small package nacho chips broken, Doritos brand
  • 8 ounces Catalina salad dressing

Instructions

  1. Combine the picante sauce, mayonnaise, salt, and pepper in a medium bowl.
  2. Mix well and set aside.
Salad
  1. Sauté the onion and ground beef in a skillet over medium heat until the beef is browned. Drain.
  2. Add the kidney beans, mix well, and set aside to cool.
  3. When ready to serve, place the chopped lettuce in a large bowl.
  4. Add the beef mixture, tomatoes, cheese, and Doritos.
  5. Pour the picante dressing over the salad along with a small amount of Catalina dressing and mix well. Alternatively, you can serve the Catalina dressing on the side.

Notes

  • Serve the salad immediately after mixing to keep Doritos chips crispy and prevent sogginess.
  • For leftovers or gatherings, keep salad components separate and assemble individual portions just before serving.
  • If preparing ahead, bring dressings and crunchy chips separately to maintain texture and flavor.
