Ingredients

  • 15 ounce can black beans drained + rinsed (approx. 1.5 cups)
  • ½ cup rolled oats
  • 1 cup pitted dates packed
  • ¼ cup raw unsweetened cocoa powder
  • ¼-1/3 cup vegan chocolate chips

Instructions

    Cup of Yum
  1. Add everything to your food processor and process until mostly smooth and well combined.
  2. Then add the chocolate chips (if using) and pulse a few times to mix them through.
  3. Scoop the batter using a small cookie scoop and roll it into a ball. Place each chocolate bliss ball on a plate, baking sheet, or sheet of parchment paper. Repeat with the remaining batter. You will get around 30 energy balls.

Notes

  • I like to add a few extra chocolate chips to each ball as I'm rolling them to make them more appealing for my little ones, but this is completely optional.
