Double Chocolate Zucchini Muffins

These double chocolate zucchini muffins are perfect! Dark chocolate muffins with grated zucchini and melty chocolate chips are the best snack this time of year. We all love them so much!

Ingredients

  • 1 ½ cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup milk
  • ½ cup avocado oil
  • 2 teaspoons vanilla extract
  • 1 ½ cups grated zucchini, squeezed and liquid drained
  • 1 ½ cups chocolate chips

  1. Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  2. In a small bowl, whisk together the flour, cocoa powder, baking powder, soda and salt.
  3. In a large bowl, whisk together the eggs and the sugar. Whisk in the milk and the oil. Whisk in the vanilla extract.
  4. Stir in the dry ingredients until just combined. Stir in the zucchini. Stir in the chocolate chips.
  5. Fill the muffin liners ¾ of the way full. Bake for 18 to 22 minutes, or until a tester inserted in the center comes out clean.
  6. Let cool before serving.
