Ingredients
For the tofu pudding
- 2 cups soy milk , very good quality or homemade
- 2 teaspoons gypsum , coagulant / calcium sulfate
- 1 tablespoon cornstarch
- 3 tablespoons water
For the ginger syrup
- ⅓ cup brown sugar
- 1 cup water
- 1 slice 1 inch / 3 cm thick fresh ginger

Instructions
Ginger syrup
- Add brown sugar into a coated saucepan.
- Add the water and the slice of ginger. Place the saucepan over medium to high heat.
- Once the mixture begins to boil, lower the heat to low to medium and simmer for about 5 minutes. Turn off the heat and set aside.
Cup of Yum
Tofu pudding
- In a bowl, add the gypsum and cornstarch.
- Then add 1 cup of water and stir until everything dissolves completely in the water. Set aside.
- In a non-stick coated saucepan, add soy milk, place over medium to high heat and bring to a boil.
- As soon as the soy milk begins to boil, immediately turn off the heat.
- Place the pot of boiling soy milk about 12 inches (30 cm) above the bowl of the gypsum and cornstarch mixture.
- Pour the soy milk through a fine mesh cheesecloth directly into the bowl. Be careful to not stir or mix the contents of the bowl just after pouring the boiling soy milk into it.
- Immediately cover the bowl with a cloth and a lid. Leave to stand for 1 hour, without touching or moving the bowl.
- At the end of the hour, remove the lid and the cloth. Serve immediately with a little ginger syrup.
Notes
- Use very good quality soy milk or preferably homemade soy milk for best results.
