Dragon Rolls

Dragon Rolls are a classic menu item that you can find at sushi restaurants with shrimp tempura, avocado, and seaweed rolled in sushi rice.

Ingredients

Sushi Rice:
  • 4 cups water
  • 2 cups white rice uncooked
  • ½ cup seasoned rice vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon salt
Dragon Roll:
  • 5 Nori sheets dry seaweed
  • 1 English cucumber , peeled, de-seeded and cut into thin strips
  • white sesame seeds toasted
  • mayonnaise spicy
Shrimp Tempura:
  • 10 Shrimp , tail removed and deveined (16-20 count)
  • 6 ounces freshwater eel optional
  • 1 1/2 cups flour
  • 3/4 cup cornstarch
  • 1 1/2 tablespoons baking powder
  • 1 1/2 cups club soda cold
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • canola oil for frying
To finish:
  • 1 avocado , pitted and very thinly sliced
  • mayonnaise spicy
  • 1/2 cup tobiko
  • 1 teaspoon white sesame seeds
  • 1/2 teaspoon black sesame seeds
To Serve:
  • pickled ginger , for garnish.
  • soy sauce low sodium
  • wasabi paste

Instructions

Sushi Rice:
    Cup of Yum
  1. Add water and rice to a large pot on high heat and bring water to a boil.
  2. Reduce heat to medium low and cover, simmering for 20-22 minutes until rice is soft and liquid is absorbed.
  3. Carefully remove cooked rice from pot into a large bowl.
  4. Mix together rice vinegar, sugar, and salt.
  5. Using a rice paddle or large spoon add in the rice vinegar evenly, cutting it in (do not excessively stir).
  6. Let cool for 20-30 minutes before using sushi rice.
Shrimp Tempura:
  1. Set a pot of oil (3 inches deep) on medium high until it reaches 375 degrees.
  2. Whisk the flour, cornstarch baking powder, kosher salt, and white pepper in a bowl together.
  3. Dredge the shrimp lightly in the mixture and set aside.
  4. Add in the club soda and whisk, then dip the shrimp in the batter before carefully frying in the oil for 2-3 minutes or until golden brown.
Dragon Roll:
  1. Wrap your sushi mat in plastic wrap (this helps prevent rice from sticking).
  2. Add a thin layer of rice evenly on the nori sheet on a clean surface.
  3. Put the nori sheet rice side down on the rolling mat.
  4. Add two pieces of shrimp to the roll, unagi (if using) and cucumber sticks.
  5. Using the roller, roll up the maki roll into a tight log.
  6. Layer the avocado slices on top, fanning them over each other.
  7. Garnish with spicy mayo, tobiko, white and black sesame seeds.
  8. Cut into 5 pieces and serve with ginger, soy sauce and wasabi.
