Dragonfruit Smoothie

Ingredients

  • ½ cup coconut water
  • 1 ½ cups frozen Dragon Fruit cubes
  • 1 cup frozen diced mango
  • 1 cup chopped pineapple
  • 1 banana, preferably frozen

Instructions

  1. Place the coconut water in the blender. Add the dragon fruit, mango, pineapple, and banana. Blend on high speed until smooth. If the smoothie is very thick, you can use a tamper to push the ingredients down towards the blade get it to blend easier. Alternatively, you can stop the blender and scrape down the sides as needed.
  2. Pour into two glasses and serve.

Notes

  • You can find frozen dragon fruit in cubes or smoothie packs in the freezer section of your grocery store- either one will work.

  • Use frozen fruit for best results- it will give this pitaya smoothie a creamy texture without watering it down. If using fresh fruit, you can add a few ice cubes to the blender. 
  • You can also turn this dragon fruit smoothie into a smoothie bowl. Use half the amount of coconut water to make the smoothie thicker. Then, transfer it to a bowl, top it with your favorite smoothie bowl toppings, and dig in with a spoon!

  • Optional add-ins:
  • protein powder
  • flaxseed
  • chia seeds
  • To add a boost of protein, you can add a scoop of protein powder to your pitaya smoothie. 
  • You can add a tablespoon of ground flaxseed, chia seeds or hemp seeds for a boost of fiber, omega-3 fatty acids and phytonutrients.
  • Toss a handful of greens like baby spinach in for a boost of nutrients.
  • Add a squeeze of fresh lime juice for a pop of bright flavor.
  • You can substitute plant-based milk like almond milk or coconut milk as the base of the smoothie instead of of coconut water for a creamier consistency.
