Dried Shrimp and Pineapple Stir Fry (Tép Khô Xào Dứa)

Ingredients

  • 6 oz papery dried shrimp
  • 1 cup pineapple chopped
  • 1 bunch green onions chopped
  • salt and pepper to taste

Instructions

  1. Rinse and drain the papery dried shrimp.
  2. Add the dried shrimp to a pan on medium high heat with no oil and cook until no more moisture remains. A cast iron pan works best if you have one, but a nonstick pan will work as well.
  3. Add pineapple to shrimp and stir often, letting the pineapple caramelize, 2-3 minutes
  4. Turn off the heat and add the scallions. Stir through to wilt.
  5. Salt and pepper the dish to taste. The shrimp should already be salty enough on its own.
