Dudhi Halwa

Dudhi Halwa is a dessert made from grated bottle gourd (dudhi), cooked with ghee, milk, sugar, and dry milk powder until thick and creamy. Flavored with vanilla and garnished with sliced almonds, this halwa has a smooth texture and a subtle sweetness. It can be enjoyed warm or chilled and features easy pressure cooking for convenience.

Ingredients

  • 2 tablespoons ghee or any cooking oil
  • 4 cups dudhi grated, packed
  • 1 cup milk divided (or almond milk, low fat
  • ½ cup sugar
  • 1 cup dry milk powder non-fat
  • 1 teaspoon vanilla **
  • 1 tablespoon almonds optional, sliced, for garnish

Instructions

  1. Set the Instant Pot to saute(normal) mode and heat ghee. Add grated dudhi and sauté for a minute. Add half of the low-fat milk. Close Instant Pot with Pressure valve to sealing. Pressure cook for 2 minutes followed by Quick Release (Natural Pressure Release works too). 
  2. Set the Instant Pot to Saute(normal) mode. Mix the milk powder in the remaining half cup of milk and add it to the Instant Pot. 
  3. Add sugar and cook for 5 minutes stirring frequently until most of the liquids evaporate and the halwa thickens. If the halwa starts to splutter set the Instant Pot to Saute(less) mode and continue to cook for another 5 minutes. 
  4. Stir in Vanilla, mix well and turn the Instant Pot off. Halwa will thicken further as it cools down. Garnish with sliced almonds. Enjoy warm or chilled.

Notes

  • Use neutral oil if you prefer to avoid ghee or are vegan.
  • Replace low-fat milk with almond milk to make it dairy-free.
  • For milk powder substitutes, try almond meal, ricotta cheese, khoya, or almond flour, adjusting milk quantity accordingly.
  • Omit sliced almonds for a nut-free dessert without affecting taste.
  • Adding plant-based green food color gives the halwa a distinctive appearance.
  • Cardamom powder works as an alternative to vanilla for seasoning.
