Durian cream:
- 30 g freeze-dried durian or fresh/frozen durian
- 60 ml heavy whipping cream
Coffee:
- 2 shots espresso or strong coffee or cold brew
- ice
- ½ C milk of your choice
Instructions
Make the durian cream:
- Add freeze-dried durian to a spice grinder or food processor and blitz until it becomes a fine powder. Set aside.
- Use an electric frother (or whisk) to whip up the heavy whipping cream until medium peaks.
- Fold in the pulverized durian powder into the whipped cream until well-incorporated.
Cup of Yum
Assemble:
- Add shots of espresso (or strong coffee) to a serving glass.
- Fill the glass with ice.
- Pour in ½ C of milk.
- Top with the durian cream.
- Stick in a straw, give it a stir and enjoy immediately.
Notes
- For a cold foam version: add in 2 tablespoon whole milk to the heavy cream and whip to soft peaks.
