Earthquake Cake

Ingredients

  • 1 cup sweetened coconut flaked
  • 1 box German chocolate cake mix prepared per instructions
  • 8 oz cream cheese
  • 8 tbsp butter
  • 4 cups powdered sugar
  • 1 tsp vanilla

  1. Preheat the oven to 350 degrees. Coat a 9 x 13 baking dish with cooking spray.
  2. Sprinkle one cup of sweetened flaked coconut on the bottom of the dish.
  3. Prepare the German chocolate cake per package instructions (use coconut oil if you can for extra coconut flavor); beat well with a hand mixer until creamy and smooth.
  4. Pour the prepared cake batter evenly over the coconut.
  5. Prepare the cream cheese mixture by melting the cream cheese and butter in a large saucepan over medium heat.
  6. Remove from the heat and add the powdered sugar and vanilla; mix well until creamy and smooth.
  7. Add dollops of the mixture to the top. You can leave as is, which makes a fun earthquake top, or you can swirl the top back and forth a little bit with a knife to make a swirl effect. Your choice!
  8. Place into the oven and bake for 40-45 minutes or until the cake has set and doesn't wiggle much when you move it. The tester test won't work because the cake is a bit gooey on the inside.
  9. Allow to cool on a rack. Serve with vanilla ice cream or whipped cream. Enjoy!
