Ingredients

  • 1 cup heavy whipping cream 240 ml
  • 8 ounces cream cheese softened, 225g
  • 8 ounces pineapple canned, 225g, crushed
  • 8 ounces mandarin oranges canned, 225g
  • 2 cups mini marshmallows fruit-flavored, 120g
  • vanilla wafers for serving
  • marshmallows Peeps, jelly beans or egg-shaped chocolate candie, optional toppings, additional

Instructions

  1. In a large mixing bowl, beat the heavy cream until stiff peaks form.
  2. Beat in the softened cream cheese until fully combined.
  3. Fold in the crushed pineapple, mandarin oranges, and fruit-flavored mini marshmallows.
  4. Cover and chill for 30 minutes.
  5. Garnish with your desired toppings. Serve with vanilla wafers for dipping, or portion into serving bowls with spoons instead.

Notes

  • You want to make sure that any canned goods used are well drained. You don't want to use any syrups or liquids that the fruit is canned with.
  • Whip the cream until soft peaks. It needs to be light and airy.
  • Don't overmix when folding in ingredients as the cream will deflate.
  • Chill the dessert for at least 1-2 hours, trust me it just tastes better.
  • Storage - Store leftovers for up to 2-3 days in the fridge. It tends to go watery.
