Easy Bacon Wrapped Green Bean Bundles

Roasted green beans wrapped in a slice of bacon topped with onion and a zesty mustard vinaigrette. Add to your family meal or holiday menu.

Ingredients

  • 1 1/2 lb. fresh green beans trimmed
  • 12 ounce thick sliced bacon cut in half
  • 1 onion sliced
  • fresh ground black pepper
Mustard Vinaigrette
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon grainy dijon mustard
  • 4 cloves garlic minced
  • ½ teaspoon granulated sugar
  • ¼ teaspoon kosher salt

  1. Wash the fresh green beans in a colander under cool water. Trim the ends of the beans with a sharp knife.
  2. Whisk the vinaigrette ingredients together in a small bowl; olive oil, red wine vinegar, mustard, garlic, sugar and salt until incorporated.
  3. Slice the bacon in half. Place a handful of green beans (8-10) in the center of a strip of bacon. Roll into little bundles and place in a 9" x 13" baking pan or baking sheet with the seam side down.
  4. Add the onion slices on top of the green bean bundles and drizzle the mustard vinaigrette on top of the bundles (save a little of baste after cooked). Season with pepper.
  5. Roast for 30 minutes at 350°F degree oven, then turn up the heat to 425°F and cook for an addition 15 minutes or until the bacon is cooked.
