Easy Baked Eggs in a Tomato

Ingredients

  • 1 large tomato
  • 1 large egg
  • a shake or two salt
  • a shake or two pepper
  • 3 tablespoons olive oil
  • 1 tablespoon cheese shredded
  • ⅛ teaspoon basil, or thyme, dried (leaves)
  • ⅛ teaspoon garlic powder
  • 1 green onions, thinly sliced for garnish if desired
  • cooking spray

Instructions

  1. Preheat your oven to 425 degrees.
  2. Prepare a baking sheet with tinfoil lightly coated in cooking spray. Set aside.
  3. Slice the top off your tomatoes, on the stem side, and use a small spoon to scrape out the core, seeds and pulp.
  4. Arrange on your prepared baking sheet. You might need to slice a little off the bottom of each tomato to keep them from rolling around on your pan. They have to be as level as possible.
  5. Using a brush, paint oil all over the inside and outside of each tomato, and season with salt and pepper.
  6. Sprinkle with basil or thyme and garlic.
  7. Bake tomatoes for 15 minutes.
  8. Sprinkle or place a pinch of cheese on the bottom of the tomato.
  9. Crack an egg and gently slide it into each tomato.
  10. Sprinkle a quick shake of salt and pepper and some more cheese.
  11. Return to the oven and bake until eggs are set, 8 to 11 more minutes. Serve immediately. Enjoy!

Notes

  • The tomatoes need to stand up straight on the baking tray. You may need to slice a little off the bottom of the tomato so they don't wobble.
  • For easy cleanup, wrap your baking sheet with tinfoil and lightly coat it with cooking spray. This also helps prevent them from rolling around while baking.
  • Serve immediately after cooking for the best flavor.
  • Always preheat your oven to ensure even cooking.
  • Experiment with other herbs and spices to alter flavor to suit your personal preference.
