Easy BBQ Chicken Sandwiches

BBQ Chicken Sandwiches are an easy weeknight meal and a perfect way to use leftover roast chicken! Top with some coleslaw for added crunch and you've got a total crowd pleaser!

Ingredients

  • 2 chicken breasts, cooked
  • 4 hamburger buns
  • 1/2 cup BBQ sauce of choice (or more, to taste)
  • coleslaw (optional)
  • Pickles (optional)

Instructions

  1. Start by shredding leftover roast chicken. If there are any bones or skin, remove them. You'll want the tender chicken meat for your sandwich.
  2. Place the shredded chicken in a skillet over medium heat. Add your favorite BBQ sauce and stir until the chicken is thoroughly coated. Let it simmer for a 2-3 minutes to absorb flavors.
  3. While your chicken is heating up, lightly toast your hamburger buns in the oven or on a stovetop griddle. This step adds a delightful crunch to your sandwich, but you can skip it if you prefer them un-toasted.
  4. Once the buns are toasted, assemble your BBQ Chicken Sandwiches. Start with a generous portion of BBQ chicken on the bottom bun. If you like some crunch and freshness, add coleslaw on top. Finish it off with a few pickles for that tangy kick.
  5. Plate your BBQ Chicken Sandwiches and serve.
