Easy Beef Goulash
This Easy Beef Goulash is a recipe that will satisfy the entire family! Packed with flavor, this hearty meal is perfect for the cooler weather!
Ingredients
- 3 tablespoon butter
- 2 onion diced
- 1/4 cup paprika
- 1 1/2 lbs beef chuck roast is what I use, choose what cut you want to use, cut into chunks
- 7 cloves garlic minced
- 2 red pepper cut into chunks
- 1 yellow pepper cut into chunks
- 2 tomato diced
- 2 carrot diced
- 2 potato cut into chunks
- 5 cups beef broth
- 1 bay leaf
- 2 teaspoon salt
- 1 teaspoon black pepper
Instructions
- In a dutch oven or stock pot, melt the butter over medium heat.
- Add in the onions and allow to simmer until they turn slightly golden, about 6-7 minutes.
- Reduce heat and stir in the paprika, beef, and garlic.
- Cook on medium heat until beef is no longer pink, about 10 minutes.
- Add in the peppers and cook an additional 5 minutes.
- Add in the carrots, tomatoes, potatoes, beef broth, bay leaf, salt, and pepper.
- Bring mixture to a boil, cover pot with lid, and reduce heat to medium low.
- Allow to simmer for about 40 minutes.
- Serve and enjoy!
