Easy blender Hollandaise sauce

Easy blender Hollandaise sauce is a delicious, buttery sauce perfect served for breakfast with poached eggs.

Ingredients

  • 3 egg yolks
  • ½ tsp Dijon mustard (optional)
  • 1 tsp lemon juice
  • ¼ tsp pepper
  • ½ cup melted butter
  • salt to taste

Instructions

  1. Melt the butter in the microwave for a few seconds.
  2. Combine the egg yolks, mustard (if using), lemon juice and pepper in a blender and blend until combined. 
  3. With the blender running, slowly stream in melted butter and allow the sauce to emulsify. If the sauce is very thick, stream in a little warm water, a few drops at a time, until the sauce has reached the consistency of your choice.
  4. Taste and adjust seasoning if necessary. I like using salted butter but if you are using unsalted, season with salt before serving.
