Easy Blender Salsa

Ingredients

  • 20 ounces Rotel Original (2 cans)
  • 1 bunch cilantro stems removed
  • ½ yellow onion peeled and cut into quarters
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon honey
  • ½ Jalapeño (see note)

Instructions

  1. Add the cans of Rotel to a blender along with the cilantro, onion, garlic, salt, pepper, cumin, and honey.
  2. Cover and blend until liquid.
  3. Pour into a dip bowl for serving or transfer to an airtight container and store in the fridge until you're ready to serve.

Notes

  • If you're worried about the spice level of this salsa, blend everything together without the jalapeno and then check the heat level. There is some heat in the Rotel from the green chiles. If you want the salsa to be spicier, add the jalapeno without seeds and blend again until it's incorporated.
