Easy Blueberry Caprese (Red, White, and Blue Salad)

Ingredients

  • 3 vine ripe tomatoes sliced into thin rounds
  • 1 (8 oz) fresh mozzarella log pre-sliced for extra ease
  • 1 pint blueberries
  • ¼ cup basil leaves shredded into thin strips
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 tbsp balsamic glaze

Instructions

  1. Slice the tomatoes and into thin rounds and shred the basil leaves into thin strips.
  2. On a serving tray layer the tomato slices and mozzarella slices so that they are slightly overlapping in rows. Top with the blueberries.
  3. Drizzle over olive oil and season with salt and pepper to taste. Sprinkle the finely chopped basil all over.
  4. Drizzle the balsamic glaze on top of the salad, or serve on the side and provide toothpicks for dipping.
