Ingredients

Filling
  • 1/3 cup orange juice
  • 3 tablespoons sugar
  • 3 cups fresh blueberries
Topping
  • 2/3 cup flour
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup unsalted butter , softened
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees. Coat an 8x8 baking dish with baking spray.
  2. In a large bowl, mix the orange juice with 3 tablespoons sugar, then add the blueberries. Pour into the prepared baking dish.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. In a stand mixer, cream the butter and 1/2 cup sugar until light and fluffy. Mix in the egg and vanilla extract.
  5. Mix the flour mixture into the batter gradually.
  6. Drop spoonfuls of batter over the blueberry mixture evenly.
  7. Bake in oven for 35-40 minutes, or until topping is lightly browned.
