Filling
- 1/3 cup orange juice
- 3 tablespoons sugar
- 3 cups fresh blueberries
Topping
- 2/3 cup flour
- 1/4 teaspoon baking powder
- 1 pinch salt
- 1/2 cup unsalted butter , softened
- 1/2 cup sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 375 degrees. Coat an 8x8 baking dish with baking spray.
- In a large bowl, mix the orange juice with 3 tablespoons sugar, then add the blueberries. Pour into the prepared baking dish.
- In a separate bowl, sift together the flour, baking powder, and salt.
- In a stand mixer, cream the butter and 1/2 cup sugar until light and fluffy. Mix in the egg and vanilla extract.
- Mix the flour mixture into the batter gradually.
- Drop spoonfuls of batter over the blueberry mixture evenly.
- Bake in oven for 35-40 minutes, or until topping is lightly browned.
