Ingredients

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 2 cups flour
  • 2 teaspoon baking powder
  • 2 cups blueberries (fresh or frozen work)
  • 1 tablespoon coarse sugar (for sprinkling on top)

  1. Preheat your oven to 350 degrees and grease a 9 inch loaf pan with baking spray.
  2. In a medium bowl, cream together the sugar and butter.
  3. Add in the eggs, vanilla extract, and milk.
  4. Add in the flour, salt, and baking powder and mix until all is combined.
  5. Gently fold in the blueberries.
  6. Pour batter into prepared loaf pan (or mini loaf pans) and sprinkle sugar evenly on top of batter.
  7. Place pans into preheated oven and bake for about 65-75 minutes if using large loaf pan, 30-40 minutes if making mini loaves.
  8. Remove from oven and allow to cool a few minutes before removing from pans and serving!
