Ingredients

  • 2 ½ cups blueberries divided
  • ½ cup white sugar
  • ⅓ cup water
  • 1 large lemon juiced and zested
  • 1 tablespoon cornstarch + 2 tablespoons water
  • 1 teaspoon vanilla extract

Instructions

    Cup of Yum
  1. In a medium pot, add 2 cups of blueberries, sugar, water, lemon zest, and lemon juice.
  2. Heat over over medium heat and cook for 8-10 minutes, stirring occasionally, until the blueberries release their juices and have broken.
  3. In a small bowl, add the cornstarch and water and whisk together to create a slurry.
  4. Add the slurry to the blueberry mixture and cook for another 1-2 minutes until it thickens
  5. Remove the pot from the heat and stir in the other ½ cup of fresh blueberries and the vanilla extract.

  • Store any leftovers in an airtight container in the refrigerator. Reheat the sauce over low heat (or in the microwave) and add a few tablespoons of water if needed.
  • Use fresh or frozen blueberries.
  • Add an additional ¼ cup of sugar if the blueberries are sweet.
  • Swap the lemon juice for a couple of tablespoon of orange juice.
  • Mix in other berries like blackberries.
  • Enjoy over pancakes, waffles, crepes, cheesecake, angel food cake, ice cream or pound cake.
