Easy Blueberry Spinach Salad
A simple spinach salad loaded with juicy blueberries, pistachios, shallot, and tangy blue cheese crumbles. It's all tossed with blueberry vinaigrette. Easy to make in less than 10 minutes, it's perfect for a light lunch or refreshing side.
Ingredients
- 8 cups baby spinach leaves or greens of choice
- 1 cup blueberries
- ⅓ cup pistachios shelled
- ⅓ cup blue cheese crumbles
- ¼ cup shallot thinly sliced
- 1 batch blueberry vinaigrette see notes
Instructions
- Toss together greens with whole blueberries, pistachios, blue cheese, and shallot. Divide and plate the salad according to how many servings you need. Recipe will make around 4 salads, but easily add more toppings or lettuce as needed!
- Drizzle the vinaigrette across each salad. You can also toss the salad with the dressing. Enjoy!

Blueberry Vinaigrette - blend the following ingredients until smooth:
1/4 cup balsamic vinegar 1/3 cup olive oil 1 TBSP lemon juice 1 cup blueberries 1 garlic clove, optional 1 teaspoon maple syrup, optional 1/4 teaspoon fine sea salt, to taste Pepper, to taste
