Easy Braised Chicken Drumsticks in Tomatillo Sauce (Instant Pot, Slow Cooker or Stove Top)
An easy Mexican-inspired chicken dish made with just a few ingredients!
Ingredients
- 6 chicken drumstick on the bone, skin removed (24 oz
- 1 tbsp cider vinegar
- 1 tsp kosher salt
- 1/8 tsp black pepper
- 1 teaspoon oregano dried
- 1 teaspoon olive oil
- 1 1/2 cups tomatillo sauce I used Frontera, jarred
- 1/4 cup cilantro divided, chopped
- 1 jalapeño (halved and seeded)
Instructions
- Season chicken with vinegar, salt, pepper and oregano. Marinate a few hours if time permits.
- Place ingredients in the slow cooker and cook low 6 hours or high 3 hours.
- Follow same directions, add a little water and cook covered on low until chicken is very tender, 30 to 40 minutes.
- Set the Instant Pot to saute, when hot add the oil and the chicken to brown on both sides, about 4 minutes on each side.
- Add the tomatillo salsa, 2 tablespoons of the cilantro and jalapeno, cover and cook on high pressure 20 minutes, until the chicken is tender. When the pressure releases, garnish with cilantro and serve over rice if desired.
