Easy Breakfast Casserole Recipe
This Easy Breakfast Casserole layers frozen hash browns with cubed ham and sharp cheddar cheese, bound by a mixture of eggs and milk seasoned with salt and pepper. Baking in a 9 x 13 inch dish until the center sets and edges brown, it delivers a hearty, savory dish combining soft potatoes, melty cheese, and tender ham for a filling breakfast or brunch.
Ingredients
- 24 oz. hash browns about 8 cups, frozen
- 16 oz. ham cubed
- 8 oz. cheddar cheese shredded, sharp
- 12 egg large
- 1 cup milk -I used skim
- 1 teaspoon salt
- 1/2 teaspoon black pepper ground
- cooking spray
Instructions
- Preheat oven to 350 degrees F.
- Add the frozen potatoes, ham, and cheese to a large bowl. Toss to combine. Pour the mixture into a 9 x 13 inch baking dish that has been sprayed with cooking spray.
- In a large bowl, whisk the eggs with the milk, salt, and pepper (I use the same bowl from step 1).
- Pour the egg mixture over the hash brown mixture. Pat everything down with the back of a wooden spoon.
- Bake for one hour, uncovered. The center should be set and the edges should be golden brown.
