Easy Breakfast Pizza
Crispy pizza crust, flavorful turkey sausage, sautéed veggies, baked eggs & parmesan cheese make up this deliciously easy breakfast pizza recipe!
Ingredients
- 2 tbsp olive oil
- ½ lb potato small dice
- ½ cup onion diced
- ½ cup red bell pepper diced
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp oregano
- 1 lb turkey sausage all natural, brand: Jennie-O
- 14 oz pizza dough
- ¼ cup basil pesto
- 1 cup mozzarella cheese shredded
- 4 egg large
Instructions
- Preheat the oven to 425°F.
- Add the olive oil to a large skillet over medium high heat.
- Add the potatoes, onion and bell pepper, sprinkle with the salt, pepper and oregano.
- Cook for 6-8 minutes.
- At the same time, in a separate skillet, add the turkey sausage and cook through, 6-8 minutes.
- Roll out the pizza dough onto a baking stone.
- Spread with the basil pesto.
- Top with the cooked potatoes, onion, bell pepper and turkey sausage.
- Sprinkle the mozzarella over the pizza.
- Place in the oven to bake for 5 minutes.
- Remove from the oven and crack the eggs on top of the pizza, place back in the oven and cook for an additional 10 minutes. (see note below)
- When the pizza comes out of the oven, feel free to top with your choice of crushed red pepper flakes, parmesan cheese or fresh basil.
Notes
- If you don’t like runny eggs, you can scramble the eggs and add them to the pizza with the potatoes and sausage before baking, or if you’re like my Mom and don’t like eggs at all, you can omit them from the recipe.
