Ingredients
- 3 pounds red potatoes halved, baby
- 1 andouille sausage 12-ounce package, thinly sliced
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon oregano dried
- ½ teaspoon smoked paprika
- ¼ teaspoon rosemary dried
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tablespoons parsley chopped leaves
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes, sausage and bell peppers in a single layer onto the prepared baking sheet. Add olive oil, garlic, oregano, paprika and rosemary; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 20-22 minutes, or until the potatoes are golden brown and crisp.*
- Serve immediately, garnished with parsley, if desired.
