Easy Broccoli Salad

Ingredients

  • 2 pounds broccoli
  • 1/2 pound Bacon cooked crisp
  • 1/2 cup red onion chopped
  • 1/2 cup almonds sliced
  • 1/2 cup raisins optional
  • 8 ounces cheddar cheese shredded sharp
  • 1 cup mayonnaise
  • 2 tablespoons white distilled vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper crushed
  • 1/2 cup tomato or cherry or grape tomatoes, chopped

Instructions

  1. Wash broccoli and pat dry.
  2. Cut off the broccoli florets, leaving the stems aside. You can save the stems for use with a different recipe.
  3. Place broccoli florets in a large bowl.
  4. Crumble crispy cooked bacon and add it to bowl.
  5. Add chopped red onions, raisins if desired, shredded cheese, and stir.
  6. Place mayonnaise, white vinegar, sugar, salt, and pepper. Stir to combine.
  7. Drizzle the dressing over the broccoli mixture.
  8. Add tomatoes and gently fold them into the salad.
  9. Cover the salad and refrigerate it overnight. You can serve immediately if you desire, but better flavors result the longer you let the salad rest.
