Ingredients

  • 1 lb farro prepared according to package directions and drained well
  • 4 tablespoons olive oil divided
  • 1 shallot diced finely, large
  • 4-6 cloves garlic minced
  • 2 teaspoons italian herbs
  • 8 oz cherry tomato sliced in half
  • 1 cucumber cut into 1" bites
  • 6 leaves basil chopped, fresh
  • 1-2 burrata fresh balls

Instructions

  1. Prepare farro according to package directions. Drain well and place in a large bowl for serving.
  2. In a small pan, heat 2 tbsp olive oil until shimmery on medium.
  3. Stir in shallots and garlic and cook until softened and very lightly browned, about 2-3 minutes.
  4. Stir shallots and onions into farro.
  5. Add tomatoes, cucumber, basil, Italian herbs to farro and toss to evenly mix.
  6. Chill in refrigerator 1 hour. (Optional - we like the flavor after it has had a chance to chill and settle, but this is up to you.)
  7. Top with burrata, and break the cheese open as you serve.
  8. Enjoy!

Notes

  • If you don't like burrata, or don't have any on hand, you can omit it or swap with 1 cup crumbled feta cheese.
