Ingredients
- 32 ounces vegetables frozen California blend
- 2 teaspoons garlic minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium lemon zest and juice
- 1/2 cup Parmesan Cheese grated
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place 32 ounces frozen California blend vegetables in a large bowl or resealable plastic bag. Add 2 teaspoons minced garlic, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Toss until the vegetables are evenly coated.
- Spread the coated vegetables in a single layer on the prepared baking sheet.
- Bake for 10–12 minutes, or until the florets start to brown slightly and the carrots are tender-crisp.
- While the vegetables are baking zest 1 medium lemon and juice it.
- Remove the baking sheet from the oven. Drizzle the vegetables with the lemon juice and sprinkle the lemon zest and 1/2 cup grated Parmesan cheese on top. Serve immediately while hot.

- Air fry at 400°F for 10-12 minutes, shaking halfway, to crisp vegetables if preferred over roasting.
- Add ½ teaspoon red pepper flakes for a spicy variation when seasoning.
- Incorporate 1 teaspoon dried herbs (rosemary, thyme, Italian seasoning) with garlic for herbal flavor.
- Swap Parmesan for other cheeses like feta or mozzarella to change the cheese profile.
