Easy Caramelized Onion and Mushroom Flatbread Pizza

This caramelized onion and mushroom flatbread pizza recipe is easy to make and difficult to put down. Thin, perfectly crisp flatbread topped with creamy Boursin cheese, onions and mushrooms caramelized to a sweet and savory goodness.

Ingredients

  • 1 flatbread
  • 2 tbsp olive oil
  • 1 small onion finely sliced
  • 1 (8 oz) package mushrooms sliced
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • 2 tbsp white cooking wine or chicken broth
  • 1 (5.2 oz) box Boursin cheese (Garlic & Fine Herbs)
  • ¼ cup shredded Mozzarella cheese
  • ¼ cup cherry tomatoes halved
  • 1 handful arugula for garnish

Instructions

  1. Preheat oven to 350 degrees F
  2. Heat olive oil in a large non-stick skillet over medium-high heat. Cook onion until translucent and fragrant; about 2-3 minutes. Add mushrooms, garlic powder, Italian seasoning, salt, pepper and white wine to the pan. Cook 6-7 minutes; or until mushrooms and onions are golden brown and soft and liquid has evaporated.
  3. Top flatbread with Boursin cheese (you may want to warm in the microwave a few seconds to make spreadable) and shredded mozzarella cheese. 
  4. Layer on the onion and mushroom mixture, and cherry tomatoes.
  5. Bake in the oven for 10 minutes. 
  6. Top with arugula.
