Easy Cauliflower Soup

Ingredients

  • 1 tablespoon butter
  • 2 ribs celery diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 1 large baking potato peeled and diced, or 2 small potatoes
  • 4 cups cauliflower florets
  • 4 ounces cream cheese softened
  • 1 cup shredded sharp cheddar cheese divided
  • salt and pepper to taste

Instructions

  1. Cook butter, celery, onion, and garlic in a saucepan over medium heat until softened.
  2. Add vegetable broth and potatoes, bring to a simmer. Cover and cook 8 minutes. Add cauliflower and cook 5-6 minutes or until tender.
  3. Remove 1 cup of vegetables and slightly chop. Set aside.
  4. Add cream cheese to the soup and using a hand blender, blend in the pot until smooth. Simmer 2 minutes. Stir in chopped vegetables and ½ of the cheddar cheese. Season with salt & pepper to taste.
  5. Garnish with remaining cheese.

Notes

  • To make prep quick, peel and chop the potato while the onion is cooking. While the potato is simmering, prepare the cauliflower.
  • Frozen cauliflower will work in this recipe.
