Easy Charro Beans (Frijoles Charros)

Ingredients

  • 53 oz pinto beans
  • 16 oz chicken broth
  • 1 lb Jalapeno Bacon
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup salsa
  • 3 jalapeno, diced
  • 3 chicken bouillon cube

Instructions

  1. Add entire can of beans and chicken broth to a large pot, bringing to a boil.
  2. Dice bacon and cook in separate skillet until cooked through.
  3. Remove cooked bacon from skillet and add to boiling pot of beans, saving bacon grease to cook remaining ingredients.
  4. Add onions to skillet (with bacon grease) and cook until soft.
  5. Add sauteed onions to pot of beans.
  6. Add bouillon cubes to pot of beans and allow to boil for 15 minutes.
  7. Add remaining garlic, tomato, cilantro, salsa, and jalapenos to beans. Turn down to simmer.
  8. Simmer until ready to serve, at least 1 hour, but more time allows flavor to develop. Serve and enjoy!
